What is nut butter?
First, let's get to the bottom of the question of what nut butters actually are. Simply put, they are pureed nuts. Depending on the type of nut, the desired taste and consistency, the nuts are roasted and blended until creamy or mixed with bits.
When buying, you should definitely pay attention to the ingredients! Sugar, fats or other additives are often added. This means that the advantages of nuts are lost and the puree is no longer as healthy as you thought.
Since nuts also contain a number of (healthy) fats, it is possible that the fat will settle at the top and the solid nut mass will remain at the bottom. However, this is by no means a sign that the puree is bad, but a completely natural process that occurs over time.
If the nut butter remains a uniform mass over a longer period of time, it is a sign that an emulsifier, i.e. a binding agent, has been used.
Our tip: It is best to stir the mixture with a long spoon or a knife before taking some out. Storing it covered is also recommended for particularly liquid nut butters such as tahini, a popular sesame seed cream.
Trend food almond butter – a source of protein
Nut butters can be made from a wide variety of nuts. Almond butter is a particular specialty and a healthy choice, as it is a tasty vegetable source of protein.
Even though almonds have a fairly high calorie density, with around 658 kcal per 100 g, they are by no means unhealthy! The wide range of nutrients clearly outweighs this “disadvantage”. What's more, the nut butter naturally satisfies you with its fiber, so you can't and don't want to eat more than a few spoonfuls.
Health benefits of almonds
Almonds are also a valuable source of vitamin E, unsaturated fatty acids, dietary fiber, biotin, and minerals such as calcium and magnesium.
Furthermore, a study showed that almonds can lower cholesterol levels and that there is a link between the nut and a reduced incidence of coronary heart disease. 1
If you suffer from histamine intolerance or sensitivity, almonds are also recommended. Along with Brazil nuts and pistachios, they are among the lowest-histamine nuts.
Did you know that the positive properties of almonds also apply to pure nut butter? In terms of nutrients, unprocessed almonds and almond butter are almost on par. However, when roasted, the almonds lose some water, which is why the nutrients become even more concentrated.

How can I make almond butter myself?
In principle, you can also make almond cream at home, but it requires a lot of work and effort.
First, the almonds have to be soaked in water – this is best done overnight. Then it is recommended to roast the nuts to get more flavor.
Finally, puree the nuts in a blender. Note: conventional blenders or hand blenders are not suitable for this; you really need a high-performance blender to conjure up a creamy mixture from the hard kernels.
So you see, making nut butter is possible at home. However, we only recommend this if you have time and a good blender and then want to use up the nut butter relatively quickly.

The cream is made from 100% almonds, which means that it contains no fat, sugar, salt or other additives. Thanks to the special roasting process and production, the puree naturally has a pleasant and full flavor.
What's more, the puree is an excellent source of protein: 100g of our cream contains 25g of protein. In addition, the almond puree provides you with healthy, unsaturated fatty acids.

How do I store almond butter?
You can simply store the almond butter at room temperature. After opening, it will keep for a few months.
As already briefly mentioned, it is possible that the fat from the nut may separate over time, as we do not use any binding agents. After a few stirrings, it is perfectly edible again.
