What is nut butter?
First, let's get to the bottom of the question of what nut butter actually is. Simply put, it is pureed nuts. Depending on the type of nut, desired taste, and consistency, the nuts can be roasted and blended into a creamy texture or mixed with pieces.
When buying, you should definitely pay attention to the ingredients ! Added sugar, fats, or other additives may diminish the health benefits of nuts, making the spread less healthy than assumed.

Since nuts also contain a number of (healthy) fats, it may be that some oil separates at the top while the solid nut mass remains at the bottom. However, this is by no means a sign that the nut butter is bad; it is simply a natural process that occurs over time.
If the nut butter remains a uniform mass over a longer period, it is a sign that an emulsifier, i.e., a binder, has been used.
Our tip: It's best to stir the mixture with a long spoon or a knife before you take anything out. Storage on its lid can also be recommended for particularly liquid nut butters like tahini, a popular cream made from sesame seeds.
